What soft cheeses are there?

What is the difference between soft and hard cheese?

The difference between soft and hard cheese is the ripening process. A shorter ripening time and moisture content makes for a softer and more creamy cheese. Soft cheeses contain more than 67% water! Hard cheeses are matured longer and have a lower moisture content than soft cheeses. This gives Emmental and Swiss Gruyère their stronger flavour.

Can you eat soft cheese when you are pregnant?

If you are pregnant, you should only eat pasteurised cheese. During the production process, the milk is heated to at least 95 degrees, killing all bacteria. So you can eat mozzarella from both buffalo milk and cow's milk. Chèvre is also a delicious French goat's cheese that you can enjoy during pregnancy.
