Roquefort
Roquefort is a raw-milk blue-veined cheese made from 100% sheep's milk. Together with Stilton and Gorgonzola, Roquefort is among the world's best-known blue-vein cheeses. This flavourful blue-veined cheese has a history that can be traced far back into the Middle Ages.
Roquefort comes from the French region of Aveyron and is named after the municipality of Roquefort sur Soulzon. The cheese carries the AOC seal of approval. This means that these cheeses are only made in this region according to a traditional recipe.
This raw milk sheep's cheese is white and covered with a special pattern of blue-green veins. These veins are caused by the addition of the fungus Penicillium Roqueforti.
Serving Roquefort
Roquefort is characterised by its rich salty and tangy flavour. Besides being used on a cheeseboard, Roquefort is also excellent for use in various dishes.
The cheese is delicious in savoury pies and pastas, among other things. Of course, it is also possible to add this cheese to a delicious salad.
Roquefort is best paired with a sweet, white dessert wine.
