During this ripening process, these cheeses lose their moisture, which is collected on wooden boards. The final product is a very tangy and firm cheese with delicious salt crystals.
Gouda cheeses may only bear their name if they meet a number of strict requirements of their own:
- Only milk from 100% Dutch cows may be used for Gouda cheeses.
- The cheeses must be prepared according to traditional Dutch recipe.
- The ripening process takes place on wooden boards.
