Origin of Vacherin Mont d'Or cheese
Vacherin Mont d'Or is a cheese made in both the French department of Doubs and the Swiss canton of Vaud. The cheese is made exclusively between 15 August and 15 March, and in both countries it has the AOC seal of approval. The reason for this is actually very simple: as soon as the first snow falls, the cows go into stalls and no longer produce enough milk to produce cheese.
The cheese has a washed rind and the texture inside is creamy. If the cheese matures even longer, it becomes completely liquid. This cheese is best when heated in the oven. Then you can dip a baguette or other delicacies in it. But Vacherin Mont d'Or is also highly recommended through hot dishes.
