Tangy North Holland cheese
At the base of this special North Holland local product is of course the milk of these cheeses. Our North Holland cheeses owe their flavour to the vast North Holland polders. The soil in this region is naturally slightly salty and this produces pasture milk that is naturally deliciously creamy.
North Holland cheeses have been declared a protected regional product by the EU. This means that the cows giving the milk must graze in Noord-Holland pastures, the cheese factory must be in North Holland and the cheese must be made according to traditional recipes.
Traditional ripening
In our own traditional maturing house, these cheeses are aged on wooden boards. North Holland cheeses are given a minimum of 26 weeks to mature.
During this time, the cheeses are given time to develop a delicious tangy flavour. To allow the cheeses to mature evenly, they need to be turned with some regularity. Of course, we do this by hand for the best results.
