Tangy North Holland cheese wheel
At the base of this special North Holland regional product lies, of course, the milk of these cheeses. Our North Holland cheeses owe their flavor to the vast North Holland polders. The soil in this region is naturally a bit salty and this produces pasture milk that is naturally deliciously creamy.
North Holland cheeses have been declared a protected regional product by the EU. This means that the cows giving the milk must graze in North Holland pastures, the cheese factory must be located in North Holland and the cheese must be made according to traditional recipes.
Traditional ripening
In our own traditional aging house, these cheeses are aged on wooden boards. North Holland cheeses are given a minimum of 26 weeks to mature.
During this time, the cheeses are given time to develop a delicious spicy flavor. To allow the cheeses to mature evenly, they must be turned regularly. Of course, we do this by hand for the best results.
