Saint Agur
Saint Agur is a blue-veined cheese from Auvergne, France. The cheese is made from pasteurised cow's milk sourced from 300 local farmers. The taste of this special little cheese is best described as full creamy with spicy notes.
During the preparation process, Saint Agur hardly differs from other blue-veined cheeses. The big difference is in the ripening of this cheese. Saint Agur is ripened briefly in a climate-controlled ripening house. In the next phase, the cheese is further matured in a paraffin bath.
The paraffin bath ensures that the cheese is completely sealed. This ensures that all the moisture remains in the cheese. Which makes this blue mould cheese very creamy.
Serving Saint Agur
Saint Agur is a delicious cheese for every Blue cheese lover. This cheese can therefore be served in various ways. This mould cheese does not look out of place on a cheeseboard, but can also be used in various dishes and is even spreadable on bread.
The special taste of Saint Agur is delicious in combination with the sweet notes of pears and figs, among others, but is also delicious with nuts. This Blue cheese is also excellent paired with sweet, mild wines and liqueur wines. The combination of sweet and salty is delicious.
