Ricotta cheese
Ricotta is a soft cheese with a sweet flavour and, unlike many other cheeses, is low in fat and salt. This Italian cheese has a soft grainy texture and can be eaten in many different ways. For example, ricotta is great for through salads or on bread, but Italians often incorporate Ricotta into pasta dishes and on pizzas.
The origins of Ricotta
This cheese is made from the whey that remains after making cheese. Normally the whey is thrown away, but the Italians found out that if you heat the whey one more time it clumps together again. Then they drain this curd well and what remains is the cheese we call Ricotta.
Fresh Ricotta is packaged in plastic containers/jars. You can get Ricotta in many supermarkets, but the really good Ricotta you buy at the cheese maker or at the caterer.
