Origin of Reblochon de Savoie
This cheese is made from raw milk from mountain cows of the Abondance, Tarine or Montbéliarde breed. Because this cheese carries the AOC kerum mark, only the milk from these cows may be used. But it does not stop there, the entire process must meet sepia conditions to bear the AOC kerumark: from feeding the cows to selling the cheese.
There are two types of Reblochon cheese, the Reblochon fermier and the Reblochon fruitier. The former is made only in the mountains or on valley farms, the latter may be made throughout the AOC area.
