Pecorino is one of the best-known sheep cheeses from Italië and probably also one of the oldest cheeses. This salty cheese was reportedly part of Roman soldiers' daily rations. Today, the cheeses are still made according to traditional recipe, using only the milk of free-grazing sheep from Lazio and Sardinia.
