Also called Brillat-Savarin Affine, this French cheese has a distinctive pungent, mouldy smell. Yet the cheese has a subtle flavour and a velvety smooth texture. However, its tangy and sour taste betrays the fact that crème fraîche has been added to the cheese.
The rind of this Brillat-Savarin Affine is soft and chalky dusty. The first layer is soft, smooth and snow-white in colour. The inner part of the cheese is thicker and more consistent than the outer layer and can be compared to the texture of brie.
