Our crumbled cheeses are given no less than 3 years to mature in our own traditional maturing house. During this ripening process, these cheeses lose their moisture which is collected on wooden boards. The final product is a very tangy and firm cheese with delicious salt crystals.
Gouda cheeses may only carry their name when they meet a number of strict requirements of their own:
- Only milk from 100% Dutch cows may be used for Gouda cheeses.
- The cheeses must be prepared according to a traditional Dutch recipe.
- The ripening process takes place on wooden boards.
