Gorgonzola is a blue cheese originating from northern Italy. The cheese is made from pasteurised whole cow's milk. Its distinctive flavour comes from the fungus Penicillium Glaucum.
The name of this cheese comes from the small town of the same name in north-east Italy. Gorgonzola is a special cheese with a protected designation of origin. This allows the cheeses to be made only in this region.
