Italian cheese: taste and character

As with Dutch cheeses, there are 'fake' Italian cheeses. Examples of Italian cheeses that are often imitated are Mozzarella and Parmesan. To protect authentic Italian cheeses, many cheeses have been given a protective status: a Denominazione di Origine Protetta (DOP). This status means that the cheese in question must be produced in a specific region according to certain guidelines, otherwise they are not allowed to carry the name. Grana Padano

Who doesn't know it? A hard Parmesan cheese from the North of Italy. A less fatty hard aged cheese, Grana Padano is matured slowly, giving it a full and distinctive flavour. A cheese par excellence for an oven dish, salad or cheese board. Looking for a good grated Italian cheese? Grana Padano is an excellent cheese to grate over a pasta dish.

Pecorino

Pecorino, from Lazio or Sardinia, is made from sheep's milk and has a hard texture. As the cheese matures for longer, it becomes spicier and salty in flavour. Want to add a spicy touch to your dishes? Then Pecorino is excellent for this.

Gorgonzola

This Italian blue cheese is made from whole cow's milk in the north of Italië. The mould, called Penicillium Glaucum, gives the cheese its characteristic flavour. It is a flavourful soft, buttery cheese that does very well in a variety of dishes. Gorgonzola does well on a cheeseboard but also as part of a pasta sauce or pizza.

Buffalo mozzarella

Traditional buffalo mozzarella is made in Campana, southern Italy, and comes from the milk of the water buffalo. Later, people also started making mozzarella from the milk of cows. This soft Italian cheese is soft in texture, full-bodied in flavour and porcelain white in colour. It always does well in salads and on pizza, but it also comes into its own on a sandwich.
