This French cheese has a red jagged rind that is washed several times during the ripening process with Marc de Bourgogne, a distillate (cognac) brewed in a special way. That is where the cheese's strong and piquant flavour comes from. Époisses Berthaut finds its origin in the village of the same name in the Côte-d'Or. Thanks to its AOP status, only cheeses made in this village are allowed to bear the name.
