Meaning of the fat content in 35+ cheese
Many people are aware that 35+ cheeses are lower in fat than, say, a 38+ cheese or a 48+ cheese. However, people often make the mistake of thinking that a 35+ cheese consists of 35% fat, but that is absolutely not the case.
This is because a cheese consists of water and solid nutrients, generally the distribution is 40% water and 60% solid nutrients. Because the fat content ‘35+’ refers only to the solids, it cannot be true that a 100-gram piece of cheese contains 35 grams of fat. The fat content in grams is then around 21 grams (35% of 60 grams).
However, an old 35+ cheese does contain slightly more fat than a young 35+ cheese. Because an old cheese has matured longer, it contains less moisture and more solids. This also means that there is proportionally more fat in old cheese than in young cheese. This is therefore exactly what the + sign stands for.
